Vinification:

    Vinification process for all varieties is without the presence of the skin, very clean (with almost no presence of pulp) and at average temperatures that go from 20°C to 24°C depending on the variety.

Distillation:

    The distillation process takes place in 1.400-liter pot stills. In this process 3 phases or “cuts” are obtained: head, heart and tails. The head cut is obtained during the first 15 to 30 minutes of the distillation, depending on the batch and the organoleptic qualities perceived by the distiller. During the heart cut, the temperature of the fumes, rectification water flow rate, alcoholic strength and temperature of the outcoming distillate, among other factors are controlled, obtaining a distillate of a graduation above 85°ABV. The heart to tails cut is made at 87°ABV.

Ageing and Maturation:

    Blends of alcohols aged between 1,5 and 3 years in French and American Oak barrels.

Tasting notes:

    Bright yellow color. On the nose, very high aromatic intensity with fruity notes of peach and pineapple, and muscat aromas combine with the notes of tobacco, vanilla and toffee from the gentle maturation in barrels. On the palate comes a round silky feeling of mature fruits and honey with a nice gentle vanilla and caramel ending.
